Preheat your oven to 375℉.
Grease a 9x5 inch loaf pan.
Puree the garlic and onion in a food processor or blender.
In a large mixing bowl, combine the lamb meat with all of the seasonings. Then pour the pureed onion and garlic over top.
Mix the ingredients together using your hands.
Place meat into a 9x5 inch loaf pan and press down.
Bake in oven for 45 minutes to 1 hour.
Allow the meat to cool completely in pan. Remove from pan and chill in refrigerator for at least 1 hour. Save any remaining grease from pan for frying with meat later.
Once cooled, remove from fridge and place on cutting board.
Slice meat into thin strips.
Pour remaining leftover grease into a skillet or cast-iron pan and heat on medium heat. place meat into skillet and brown on both sides until crispy.
Remove from pan and now you're ready to assemble your gyros!
