Banana Bread

This Banana Bread recipe is super easy to make and it’s absolutely scrumptious! We are a lot of people around here, (a family of 10) so I tend to purchase bananas in bulk every single week. I use them in smoothies quite often (most days in fact) and the baby loves to snack on them especially. Like most families, though, we go through phases. Some weeks the bananas are devoured, and then we’ll go through a period of time where everyone seems to be boycotting bananas. Anyone else?

SO, what do you do with brown bananas in bulk?

Make Banana Bread of course! I really don’t like to waste food, especially with so many mouths to feed. We could throw them in a compost bin, but I much prefer to keep that for scraps only. So, using them up in a recipe is usually my go-to for leftover food that is tempting to become waste. Another great option would be to cut them up and freeze them for smoothies! Frozen bananas make the best ice-cream like smoothies!

I decided one weekend to throw together some banana bread to use up all of our brown bananas, and who doesn’t love a warm slice of banana bread slathered in butter?! I certainly do and so does my family as it turns out. After this, I may have noticed less and less bananas being eaten during the week. My suspicion is that everyone is hoping for banana bread at the end of the week. Perhaps.

what all do you need for this super easy banana bread?

  • Ripe brown bananas
  • Sugar
  • Butter
  • Egg
  • Vanilla ext.
  • Flour
  • Baking soda
  • Salt
  • Cinnamon (optional)

How to make it:

First, you’ll want to mash up your bananas. Super fun for your kids! It’s also quite easy to throw them in a mixer as well.

Add in the sugar, egg, butter, and vanilla and mix.

Then, add the flour, salt, baking soda, and cinnamon.

Mix for a minute or two, until nice and smooth.

Preheat your oven to 350 degrees F.

Grease a bread pan and pour in your batter.

Bake for around 50-60 minutes.

You’ll need to test with a knife or toothpick to see when it’s done.

Now remove from oven and let cool a minute before serving.

Slice and slather in butter to eat!

Ingredients

  • 3-4 ripe bananas
  • 3/4 cup sugar
  • 1/3 cup butter (5 1/2 tbsps.)
  • 1 egg
  • 1 tsp. vanilla extract
  • 1 1/2 cups all purpose flour
  • 1/2 tsp. baking soda
  • 1/2 tsp. salt
  • 1 tsp. cinnamon

Instructions

  • Preheat oven to 350 degrees F.
  • Grease bread pan.
  • First, mash up the bananas. By hand with a fork or using a stand mixer.
  • Add in the sugar, egg, butter, and vanilla.
  • Then, add the flour, salt, baking soda, and cinnamon.
  • Mix for a couple of minutes until smooth.
  • Pour batter into the bread pan and bake for 50-60 minutes. Check with knife to see if it's done. If the knife comes out clean, it's ready to come out of oven.
  • Remove from oven and let cool a few minutes.
  • Slice and serve with butter!
