Brazilian Pave Dessert

Pave is a Brazilian Dessert and is a type of biscuit layer cake, similar to tiramisu or banana pudding even. It’s made of sweetened condensed milk, lady finger biscuits, chocolate and sometimes whipped cream. This is a simple no- bake recipe that is just so delicious!
We made this for our geography studies on Brazil, and this turned out to be yet another favorite that we will for sure be making again! I’ve seen where some Brazilians have been known to put different types of fruit in it, such as raspberries or bananas. This may be why I think it strongly resembles banana pudding. We chose to leave out any fruit this time but may try some in the future. It would be delicious either way!
What you need for brazilian pave:
For the stovetop cream:
- Egg yolks
- Sweetened condensed milk
- Milk
- Cornstarch
- Vanilla extract
- Heavy cream
Assembling:
- Lady finger biscuits (recipe here if you want to make your own, they are super easy!)
- Milk
Chocolate Ganache topping:
- Dark chocolate
- Heavy cream
Garnish:
- Whipped cream topping (optional)
- Dark chocolate shavings
How to make pave:
FOR THE CREAM:
In a saucepan, mix together sweetened condensed milk, egg yolks, cornstarch, milk, and vanilla extract.
Heat over medium heat, stirring constantly, until mixture thickens.

Remove from heat and add heavy cream. Allow to cool.
ASSEMBLING:
Dip the Lady Finger Biscuits in milk and place on the bottom of your dish.

Spread 1/2 of your cream mixture over top.

Now add 1 more layer of biscuits. Then the last 1/2 of your cream mixture. Refrigerate for an hour or so.

FOR CHOCOLATE GANACHE TOPPING:
Place chocolate chips into a bowl. In a small saucepan, bring the heavy cream to a simmer. Now pour over the chocolate chips and let sit for a couple of minutes. Then stir together until smooth.

Pour Chocolate Ganache over the Pave and refrigerate for at least 3-4 more hours.

GARNISH AND WHIPPED TOPPING:
Now you will add your whipped topping. I prefer to make my own. All you would need to do is whip up 1 cup heavy cream with 1/2 cup powdered sugar, or you can just purchase some pre-made. You can also skip this step altogether if you prefer. Many Brazilian Pave recipes do not call for it.

Before serving you will want to add chocolate shavings for garnish.

Serve and enjoy!
