Frosty Winter Bars

Frosty Winter Bars are a simple to make treat that tastes like heaven! They are so delicious and sweet, like a pecan pie with icing on top! They make for the perfect holiday treat that can be cut into small bite sized squares. Great for taking to Christmas parties or just for serving as a special treat to your family at home!
Frosty Winter Bars are better known to me as my “Nanny’s Frosty Winter Bars”. My nanny was my oh so loved great grandmother. She used to make a very small batch of these bars specially for my papa. I lived with my nanny for a short time when I was around 15, right after my papa had passed away. She continued to make these bars in much too small of a pan in my opinion. Everyone in the family loved them so much! While living with her, I enjoyed them often and always wished there were a little more to go around!
So, as I got older, I learned to make them myself. Then I met and started dating my now husband. He was stubborn and refused to tell me his birthdate early on while we were dating. All was ok, because he had a roommate who was willing to betray him in this way. So, without my now husband knowing, I prepared these special Frosty Winter Bars for him on his birthday, but I refused to tell him why I had made them. He knew that I knew it was his birthday, but neither of us would budge. He bugged me all night, asking why I had made these for him.
I have now made a tradition of making these for my husband every year on his birthday, in honor of my nanny and papa, and how stubborn both my husband and I are. They continue to be a favorite treat in my family, and I hope you enjoy them as well!

For the Bars
- Butter
- Sugar
- Milk
- Egg
- Graham cracker crumbs
- Graham crackers
- Chopped nuts
- Shredded coconut
The Cream Cheese Icing
- Cream cheese
- Butter
- Powdered Sugar
- Vanilla extract
How to make frosty winter bars?
You’ll start by lining a 9×13 inch pan with whole graham crackers.

Then in a medium size pot, melt together the butter and sugar over low heat. Remove from heat and add in the cold milk to cool the butter down a bit.

Once the butter is cooled, but still melted, you’ll slowly whisk in the egg.
Then place the pot back onto the stove over low heat and slowly bring to a boil, stirring constantly.
Once it starts to boil, remove from heat and add in the graham cracker crumbs, nuts, and shredded coconut.

Spread mixture over the crackers lining the 9×13 inch pan.
Add an additional layer of whole graham crackers over top and refrigerate for 2 hours.

Meanwhile, Mix together the softened cream cheese, butter, powdered sugar and vanilla.
Once the bars have cooled, spread the cream cheese icing over the top. Sprinkle with chopped nuts or graham cracker crumbs.

Cut into 16-20 squares and serve!
These frosty winter bars can be kept in the refrigerator for up to 4 days.

- 9×13 inch pan
- medium cooking pot
Ingredients
For The Filling
- 1 cup butter 2 sticks
- 1 cup packed brown sugar or white sugar
- ½ cup milk more as needed
- 1 egg
- 1 cup graham cracker crumbs 1 package
- 1 cup chopped nuts pecans or walnuts
- 1 cup shredded coconut
For The Cream Cheese Icing
- 8 ounces softened cream cheese 1 package
- 1 cup softened butter 2 sticks
- 1 tsp. vanilla extract
- 2 cups powdered sugar
For Lining the Pan
- 16 whole graham crackers
To Sprinkle on Top
- ½ cup chopped nuts or graham cracker crumbs
Instructions
- Line a 9×13 inch pan with about 8 whole graham crackers. Enough to fit your pan.
- In a medium size pot, melt your butter and sugar together over medium low heat.
- Once melted, remove from heat. Pour in the cold milk to cool it down a bit.
- Once the butter is cooled down, but still melted, slowly whisk in your egg. (If the butter has not cooled, the egg may start to scramble, and you don't want that)
- Place your pot back over the stove on low heat. and slowly bring to a boil, stirring constantly.
- Once it starts to boil, remove from heat and add in the graham cracker crumbs, the nuts, and the shredded coconut.
- Spread mixture over the graham crackers lining the 9×13 pan.
- Add another layer of whole graham crackers on top of mixture.
- Cool in refrigerator for 2 hours.
